This year we harvested our first jar from a humble homegrown hemp plant. Unfortunately, these were monoecious varieties, which is why there were few flowers, with a large number of seeds. We decided to use our harvest to make our own hemp butter. We used the recipe and tips from the book “Stonerchef. Hemp cooking” by Anita Kilian-Kuźniewicz and Piotr Kuźniewicz. There you will find the necessary knowledge about the use of hemp in the kitchen, lots of great recipes, but also some history and knowledge for future medical marijuana patients. In this post, however, we will only deal with the recipe for hemp butter!

How to prepare the material for further processing? Apart from trimming, washing and drying hemp, decarboxylation of the dried material is a very important element. It is used to transform the acidic forms of cannabinoids into active forms, i.e. devoid of carboxylic bonds.
We can achieve this by heating the herb at the right temperatures and at the right time. The word appropriate can be a bit irritating here, because what does it actually mean? It is assumed that temperatures in the range of 100-120 degrees Celsius and time in the range of 45-60 minutes will guarantee the activation of cannabinoids in our dried hemp. Also pay attention to what drought you have. Choose the temperature and heating time taking into account, among others:

  • the state of the dried material (whether it is wet or well dried);
  • degree of grinding – it is better not to grind too finely to avoid burning the small pieces, and thus the degradation of cannabinoids.

We carried out our decarboxylation in the oven, oven set to about 100 degrees. The Stonerchefs recommend a temperature of 110 degrees, but we have translated this to our equipment, which always needs to turn the temperature knob a bit ;) We placed the dried hemp in a mold and tightly covered it with silver aluminum foil. Such a treatment was to make the cannabinoids that began to be released during heating remain under the cover and fall back to the dried material. The drought stayed in the oven for about 40-45 minutes.

If the law allows you to do so and you make hemp butter from dried THC, it is best to heat the dried herb for about 30 minutes at 110 degrees Celsius.

Our drought was really well dried before, and after that time it smelled beautiful and turned slightly brown. After removing the form from the oven, do not immediately remove the foil, due to the aforementioned cannabinoids. Let them settle, not disappear.

We did not separate the seeds from our dried material, so we increased the recommended 7-10g of dried material per 200g of butter to about 12 grams. If you only have flowers, without seeds, it is not worth adding more material to the butter. This treatment will not make your butter more CBD. A given amount of fat is also not able to absorb a certain amount of cannabinoids. From the book we learn that the maximum is about 10 grams of dried hemp per 250 ml of fat.

Cannabinoids are hydrophobic compounds that dissolve best, for example, in fats or alcohol, i.e. in organic compounds. If we want to start the adventure with cannabis cooking, we need to know the best carriers for cannabis and, of course, proven recipes for infusions. Currently, fats are most often used as a carrier of cannabinoids. Fats increase the absorption of cannabinoids in our body, which is what we care about the most. so-called hemp oils, CBD oils are usually made on the basis of vegetable fats, while animal fats will work just as well, or maybe even better. Animal fats are rich in saturated fatty acids, and the more of them, the more efficient the infusion will be. To prepare the hemp butter we used:

  • 200 g of real butter,
  • 100 ml of water,
  • about 12 g of decarboxylated dried hemp (with seeds).

We melted the butter on a "low fire" ;) or, if you prefer, on a low power induction hob. Then we added about 100 ml of lukewarm water. Adding water will prevent the butter from burning. Water can be added within 100-200 ml, we focused on the minimum and careful checking of the heating temperature. After the water comes the time to add decarboxylated hemp. With us, it is a mix of the CBD variety with the CBG variety. After thorough mixing, we heated the butter for about 3 hours. Stir the mixture occasionally and check the temperature. The best temperature for heating hemp butter is around 90-95 degrees Celsius. In fact, that's all! It's simple right? The last step is to drain the used plant material from our butter. A small-mesh strainer was enough for us, but if you have a cheese scarf, use it! Our butter landed immediately in a container, in which it was later stored, thanks to which every drop was preserved ;) Still liquid hemp butter in a closed container went to the fridge for the whole night. The final result? Beautiful green hemp butter with an exceptionally intense smell and taste! Ours smelled of nut and hemp, but the intensity of the flavor was so great that we decided to use it in its entirety for baking.

Knowing the recipe for hemp butter, you can really go crazy in the kitchen. By adding such butter to dishes or pastries, you can get not only delicious, unusual hemp dishes, but also healthy! It is worth remembering, however, that terpenes and cannabinoids, which we care about the most in cannabis cooking, have their boiling points. If we exceed the given temperature, the beneficial compounds will degrade us. Therefore, a very important thing in cooking with hemp is to carefully observe the temperatures. The boiling points for CBD are around 180 degrees, CBG 126 degrees and THC 157 degrees. These are the temperatures at which a given compound begins to evaporate. When it comes to THC, there is no tragedy yet, because it degrades into CBN - cannabinol. CBN is a cannabinoid known for its hypnotic and sedative properties. Calmness and help in falling asleep will certainly be the desired effect for many.
